Sour plum cherry tomatoes

A couple of months back I had some sour plum tomatoes at Jia’s. So I decided to do some my own. Recipe is from http://happymumskitchen.blogspot.com/2016/03/preserved-plums-and-cherry-tomatoes.html?m=1

Ingredients: sour plum, cherry tomatoes, honey

First, boil some water and use it to soak the sour plums. (Recipe called for around 6, but being kiasu, I used 8, which was overkill. So, follow the recipe). In the mean time, score the tomatoes.

Put tomatoes into boiling water and blanch for 15 seconds. Fish out and soak in cold water. Remove skin of tomatoes. A bit mah fan but indeed without skin tomatoes taste better. I didn’t mind the skin, so next batch, I think I might just score and blanch the tomatoes without removing the skin.

Place the tomatoes into a container. I am using a water tumbler. Pour sour plum mixture (water and sour plums) into the container. Add in around 2 tablespoons of honey to sweeten. (I didn’t mix) leave in fridge to soak for 1 or 2 days before eating.

Easy refreshing snack. Hubby finds it not bad and will eat it again. I think I will do it again. Lower calories snack. 👍🏼

On a separate note, so happyyy that my basil bloomed!
